Also known as “the muesli cake”, it’s one of my Mom’s signature bakings and also one of everyone’s favorites. It is not only healthy and delicious, but also very quick and super easy to make, and let’s be honest, that’s the best kind of recipes.
250g unsalted butter
1 cup sugar
1 cup plain flour
4 cups oat flakes
2 large eggs
Step one is to melt butter with sugar and five spoons of hot water, constantly stirring, so it won’t burn. Leave the mix to cool down.
Then add two eggs, stir, add flour, oat flakes, sunflower, and sesame seeds. Stir once again, so all the ingredients are well mixed. Preheat oven to 200C.
Layer the flat baking tray with paper. Using a spoon, place the cake mixture on the tray, and smooth the surface. Bake for 30 minutes, until the cake is golden. Once it’s ready, it is important to slice it while it’s still hot (but be careful!). Otherwise, it will crumble just too much.
And that’s it! Considering how easy it is, no wonder we used to eat it almost every week. And it never gets boring! For me, it smells like home and Friday evenings. It’s perfect as a healthy snack or just a little dessert (with no excessive amounts of sugar in it).
